Roaster's note: Cascara is the coffee fruit and skin which is removed from around the seed (called the coffee bean). It is dried and then cleaned before storage and shipping. There are two types Cherry Cascara and Natural Cascara (A product exclusive only to Mountain Top as far as they know) Both are fruity and high in antioxidants. Typically it is brewed like any tea, and should be steeped for at least 15 minutes. We often combine it with ginger and citrus, and let it cool for a refreshing drink that keeps well in the refrigerator. Traditionally, spices like cardamon are used as well.
Tea Variant serving suggestion -
- Use 5g of cáscara per 200ml
- Brew for 4 minutes
- Water temperature 90 degrees C
- Serve immediately
- Store in a cool dry place, away from the light
Steeped Brew serving suggestion -
Natural Cascara is when the fruit is allowed to dry around the seed before being stored and later removed, giving it a sweeter, more full bodied mouth feel and deep fruit flavours.
